Fresh Apple Gingerbread
A moist and deeply satisfying Gingerbread with a light Lemon Sauce.
1/2 cup butter—softened
2 large eggs
2/3 cup molasses
2 cups whole wheat flour
1 1/2 teaspoons baking soda
1 tablespoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground clove
1/3 cup milk or soya milk
1 1/4 cups grated apple
Cream butter, eggs and molasses well.
Combine the dry ingredients and awith the milk to the butter mixture.
Stir in the grated apple.
Pour into a lightly sprayed 9 inch square pan
Bake at 350 for 35 - 40 minutes. Cool 10 minutes in the pan and then remove and cool on a wire rack.
Serve with whip cream, whipped tofu or Lemon Sauce
